Chateau Ste Michelle

Pioneers of the Washington wine region, Chateau Ste Michelle was founded at a time when many people thought great wine only came from Italy – or California. Combining Old World winemaking traditions with New World innovation, Chateau Ste Michelle is one of the few premium producers in the world with two state-of-the-art wineries, one for red and one for white.

Sustainability is a big focus at the estate. The team is working to reduce their energy consumption, conserve water and reduce waste. It is a Washington State certified EnviroStar business and, in February 2023, both the Cold Creek and Canoe Ridge Estate vineyards received Sustainable WA certification.

Catena

No-one has done more to put Mendoza on the map, or to raise the profile of Malbec from Bordeaux reject to one of the world’s most fashionable grape varieties. Nicola Catena, Nicolas Catena Zapata’s grandfather, planted his first Malbec vineyard in Mendoza in 1902, suspecting the Bordeaux blending grape would find its hidden splendour in the Argentine Andes.

Today, Laura Catena is at the helm. A biologist who graduated with honours from Harvard University, she decided to instil in the winery team the method of research and study, which she calls “the science of understanding nature”.

 Vina Carmen

Vina Carmen is a renowned Chilean winery with a rich history dating back to 1870. Nestled in the Maipo Valley, one of Chile’s premier wine regions, Vina Carmen has been producing high-quality wines for generations. Their commitment to sustainable practices and traditional winemaking techniques has earned them a reputation for crafting exceptional wines that showcase the unique character of Chilean terroir.

Graham Beck

No sparkling wine list is complete without a bottle of Graham Beck’s Cap Classique masterpieces. A giant of the South African wine scene, the Robertson-based winery have firmly established themselves as one of the world’s leading sparkling wine houses. Its cellarmaster, Pieter, is widely known as ‘Bubbles’ Ferreira.

The winery uses minimal intervention to allow the terroir to really shine through in the final wine. Rich, limestone soils and a dry, cool climate produce wines of exquisite freshness and depth.

Larry Cherubino

Larry Cherubino, a winemaking legend, has left an indelible mark on the Australian wine scene. With a career spanning decades, he's worked with some of the world's most iconic wineries, but it’s his eponymous label that truly showcases his maverick spirit. He blends traditional techniques with innovative methods, crafting unique wines from sustainably farmed vineyards.

His adventurous palate leads him to experiment with both classic and lesser-known grapes. Cherubino's dedication to quality and sustainability has earned him cult status in Australia and the coveted Young Gun of Wine Award.  

Spy Valley

Although not run by secret agents, Spy Valley is based just down the road from a US government listing post. One of Marlborough’s most acclaimed wineries, the family-run set-up is known for its textbook, terroir-driven Sauvignon Blanc. But they don’t stop there, and chief winemaker Wendy Stuckey and her team are also experts in producing brilliant aromatic whites, including Riesling and Pinot Gris.

To promote biodiversity in the farms, the winery has planted around 700 native trees in the lower Wairau Valley alone. Over 20% of its power is provided by 200 solar panels, and the winery also generates its own nitrogen. Low-toxic, environmentally friendly products are used in the winery and vineyards. All bottles, meanwhile, are made from 96% recycled glass.
