Domaine Paul Nicolle is firmly rooted in the winemaker village of Fleys, just 4km from the town of Chablis.

The domaine was created with less than 1ha in 1979 by Robert Nicolle and Josette Laroche, who can both trace their history from winemaking families in Fleys back to the late 19th century. Since establishing the domaine, Robert and Josette worked tirelessly to gradually increase the size of their vineyards, and currently the domaine produces wine from 20ha of vines. In 1999, the two were joined by their son, Charly, who is now officially in charge of the domaine, although Robert can still be found out in the vineyards almost every day.

The domaine has long applied integrated farming methods and is committed to sustainable agriculture through the HVE (High Environmental Value) certification. The largest holdings of the domaine are in AOC Chablis, in which a total of six appellations are produced under Paul Nicolle’s name. For the still wine, elevage is done on the lees in stainless steel tanks, which produces a house style that is both fresh and vibrant, but also rich on the mid-palate.

What sets Charly and his wife, Lucie Thieblemont’s, wines apart from other Crémants is that, due in part to Charly’s earlier work for a producer in Champagne, the couple do everything 100% in house, from vinification to hand-riddling to disgorgement. With this amount of care, it makes sense that Paul Nicolle is known for consistently producing delicious wines each year, that are both typical of Chablis and true to its own style.
